Just thought it'd be fun to raid the recipe stash and share 7 recipes all at once. There are a mix of desserts and entrees in this batch. Mmmmm, blueberry cobbler sounds awfully good this time of year, especially with a scoop of ice cream. I am glad to include a recipe for "Pear Pie" here, I think the lowly pear is not given nearly enough respect. Apples are wonderful but, really, is there much better than a soft, delicious, juicy pear? Never been sure why pears don't get more respect. The baked corn pudding sounds delicious also. I've not sampled that recipe, but I love corn this time of year. These recipes come from several different Amish communities and cooks, so enjoy!

AMISH BAKED CORN PUDDING

Ingredients

  • 2½ cups of corn, canned, fresh or frozen
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ⅛ teaspoon freshly ground pepper (or white pepper)
  • 1½ tablespoons flour
  • 2½ tablespoons melted butter
  • 3 eggs, beaten
  • 1 cup whole milk
  • 1 teaspoon vanilla
  • dash cinnamon
  • pinch nutmeg

Instructions

  1. Drain corn if canned. Thaw corn if frozen.
  2. Mix ingredients in a 1½ quart baking dish.
  3. Bake at 350 degrees for 35 minutes.

Amish Casserole

Ingredients

  • AMISH CASSEROLE
  • 1 pound ground beef
  • 1 (10.75 ounce) can condensed tomato soup
  • ¼ cup brown sugar
  • ⅛ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (12 ounce) package wide egg noodles or equivalent homemade
  • 10 slices American cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of lightly salted water to a boil.
  3. Add egg noodles and cook until tender, about 7 minutes.
  4. Drain and return to the pan.
  5. Mix in the cream of chicken soup until noodles are coated.
  6. Crumble the ground beef into a large skillet over medium-high heat.
  7. Drain the grease, and stir in the tomato soup, brown sugar, pepper and salt.
  8. Spread half of the beef in the bottom of a greased 2½ quart casserole dish.
  9. Arrange 5 slices of cheese over the beef.
  10. Top with half of the noodles, then repeat layers ending with cheese on top.
  11. Bake for 35 minutes in the preheated oven, until cheese is browned and sauce is bubbly.

Amish Caramel Pie

Serves: 2 pies

Ingredients

  • 3 cups brown sugar
  • 3 cups water
  • 2 tablespoons butter
  • 1 cup flour
  • 3 cups milk
  • 6 egg yolks

Instructions

  1. Boil brown sugar, water and butter together for 2 or 3 minutes for a good strong caramel flavor. Slowly stir flour mixture into boiling syrup, stirring constantly until it comes to a boil.
  2. Remove from fire; cool 5 minutes and stir once.
  3. Pour into 2 baked pie shells.
  4. Top with either a meringue from the egg whites or allow pie to cool and top with whipped cream.

AMISH OVEN-FRIED CHICKEN

Ingredients

  • ½ cup flour
  • 2 teaspoons paprika
  • 1 teaspoon pepper
  • ¼ teaspoon. dry mustard
  • 1 teaspoon salt
  • 1 cut up broiler or parts of chicken
  • 1 stick butter

Instructions

  1. Mix dry ingredients in a gallon size plastic bag.
  2. Put chicken in bag and coat chicken well.
  3. In 9X13 pan melt
  4. butter and place chicken in pan.
  5. Bake at 350 F for 1½ to 2 hours till done(less than an hour for boneless).

Amish Pear Pie

Serves: 1 pie

Ingredients

  • 3 tablespoons flour
  • fresh pears, enough to fill pan
  • ½ to ¾ cup sugar
  • milk or cream

Instructions

  1. Mix together flour and sugar.
  2. Slice pears and stir into flour mixture to coat.
  3. Pour mixture into bottom crust. (unbaked pie crust)
  4. Pour milk or cream over pears, enough to cover pears.
  5. Sprinkle cinnamon and sugar over the top.
  6. Bake at 350 for 35-40 minutes.
  7. Test by shaking pie, done when solid.

Amish Crazy Cake

Serves: 1 cake

Ingredients

  • 2 cups sugar
  • 2 teaspoons baking soda
  • 3 cups flour
  • ¾ cup Crisco oil
  • 6 tablespoons Hershey's Cocoa
  • 2 tablespoons vinegar
  • 2 teaspoons salt
  • 2 cups cold water
  • 1 teaspoons vanilla

Instructions

  1. Heat oven to 350
  2. Place all ingredients, except 1 cup of the water, into a bowl.
  3. Stir until smooth then add the rest of the water.
  4. Stir well. Pour batter into a 9"x13" cake pan.
  5. Bake for 30 to 35 minutes. May be eaten plain or iced with a butter icing.

Amish Blueberry Cobbler

Ingredients

  • 1 stick oleo
  • 2 eggs
  • ½ tsp. salt
  • 4 Tbsp. vinegar
  • 1 tsp. cloves
  • 2 cups sugar
  • 3 cups flour
  • 2 tsp. soda
  • 1 tsp. cinnamon
  • 1½ cups
  • blueberries
  • ½ cup blueberry juice

Instructions

  1. Cream butter and sugar together.
  2. Add eggs and beat until fluffy.
  3. Sift flour and measure.
  4. Sift dry ingredients and add juice and vinegar.
  5. Beat thoroughly after each addition.
  6. Add berries and stir just enough to blend into dough.
  7. Bake for about 40 minutes in 350 degrees oven
