Anyone watch The Voice? We love that show and are really loving this season with Gwen and Pharrell. There are a lot of talented singers, one thing we are not good at 😉 We wish we could sing. Poor Madison has to listen to our not so in tune voices as we sing her to sleep. Other news, things are good over here. Thanks for all the sweet comments and tips to help Lori and Madison. We cannot get over she will be turning 3 weeks this Saturday. Crazy.

Madison likes her cookies too haha. We know she is going to love baking in the kitchen with us once she gets older. We cannot wait!

The past few weeks we have been craving cookies and Michelle is still not eating eggs, so we had to come up with a cookie recipe that hit the spot without using eggs. In addition, we needed a QUICK recipe as we don’t have much spare time anymore waiting for things to bake. We looked at some of the ingredients we had on had and thought why not? Let’s see if this works.

10 minutes later we had the most amazing cookies! We were blown away. We each enjoyed one and hit one another in shock as we couldn’t believe the recipe worked! We quickly ran and gave a cookie to Gary and our mom to see what they thought…they absolutely loved them. Ever since our mom was here we have made a version of these cookies every day from using different nut and seed butters. Yep we have a few more flavor ideas coming!

We adore these cookies so much. The texture is perfect. Soft. Light. And a slight crunch.

And we think you will too!

Most 4 ingredient cookie recipes out there have a lot of sugar in them. Don’t get us wrong we like sweet things, but our bodies prefer less sugar. Therefore, we only did 2 tbsp of a sugar which provides just the right amount of sweetness.

If you like to use stevia for sweetness, replace the maple syrup with 2 tbsp milk of choice and add a few drops of stevia.

Not only are these cookies made from just 4 simple ingredients they can easily be customized to your individual liking.

If you eat paleo simply use sunflower seed butter or almond butter!

And if you do not like cooking your food you can safely eat these cookies RAW! Or dehydrate them a few hours for a nice simple raw cookie.

Why we used gelatin in these cookies?

We love gelatin. Ever since incorporating it into our diet back in 2013 we’ve been hooked. We love how it is gut friendly, and a nice way of getting in a little bit more protein and nutrients into our diet. We used Great Lakes green bottle gelatin, we get it off Amazon (no affiliation).

Why did we use peanut butter?

Who doesn’t love peanut butter 😉 We have made these with just about every nut and seed butter out there and they have turned out great.

Why did we use coconut flakes?

It is more for texture reasons.

Why we use maple syrup?

We love it. But we have made these cookies with coconut nectar and stevia and love them just as much.

Baking is optional for these 4 ingredient cookies. We just prefer a nice warm cookie right out of the oven.

Ingredients

  • 1/2 cup peanut butter or any nut butter
  • 2 tablespoons coconut flakes
  • 2 tablespoons gelatin
  • 2 tablespoon maple syrup

Instructions

  1. Pre heat oven to 350 degrees.
  2. Place all ingredients into a bowl.
  3. Mix together until it forms a dough.
  4. Scoop onto baking tray.
  5. Dough is thick.
  6. Flatten cookies if you desire a flat cookie.
  7. Bake for 10 minutes.
  8. Let cookies cool on cooling rack a few minutes.

Notes

If you flatten cookies it provides a more crunchy cookie.
Can enjoy cookies raw for a yummy dough ball cookie or dehydrate them for a few hours.

Substitution ideas:

We used peanut butter but any nut or seed butter would work just fine.

For the gelatin you can use any protein powder of your liking or you can try any ‘flour’ of your liking.

For the coconut flakes you can use a nut meal.

For the maple syrup you can use stevia (we gave ideas above) or coconut nectar.
